Landerneau steamed green tea - Emile Auté

Émile Auté, former restaurateur, creator of his tea brand in 2015, today specializes in the transformation of production from different sites, carrying out full-time harvesting work at the service of producers in order to highlight the particularities of each location.

Here he offers us a Landerneau green tea made from seeds. We find the freshness and soft umami of great green teas with a liquor typical of these spring steamed green teas with yellow-green reflections. This is an exclusive test of heating the leaves by steaming to stop oxidation that Emile Auté offers us. A first attempt that turns into a masterstroke.

Prefer a gong fu cha preparation, leaving 2-3 min during the first passage of water, then extend the time by 1-2 min over the course of the passages.
