This creation was born from a love affair with the Timur or Timut berry, which grows wild in Nepal in the Himalayan foothills. Its Latin name is Zanthoxylum armatum, and it is part of a large family of very fragrant berries that are often likened to pepper but are not, such as the Sichuan "pepper". It is a berry that has a fresh, zesty facet that is naturally pink grapefruit.
I wanted to create a thirst-quenching drink with this dominant grapefruit flavor that I accentuated by adding rose petals, and to give it body and a warm, gentle touch, I used a large-leaf white tea from the White Peony family (or Bai Mu Dan) sourced in Vietnam.
