Green rooibos & buckwheat
This creation is a mixture of Africa and Asia, South Africa and Japan, hence its name: Soba in reference to the traditional Japanese soba cha (literal translation: buckwheat tea, or more precisely buckwheat infusion) Khoï in reference to the Khoïsan people who have been consuming and harvesting rooibos in the Cederberg mountains of South Africa for several hundred years. I wanted to find this green and toasted plant duality present in Genmaicha, Japanese green tea and toasted rice, but without theine, which is why I associated a green rooibos, with fresh plant notes, with buckwheat seeds bringing a toasted facet, dried fruits. This creation can be found on the Halle aux Grains tea menu at Maison Bras and at Verlet.
