From its Latin name Matricaria recutita, I discovered the chamomile matricaria or small chamomile when I was a student in agronomy during an internship in Peru. Very popular, easy to find on the markets, it is part of the Peruvian daily life, known for its digestive and relaxing virtues. Before discovering it, I had an idea of the chamomile as a bitter flower that I used to consume as a child for the same virtues. Because I used to consume its cousin, the big chamomile or Roman chamomile with white and bitter flowers. The little chamomile, with its small golden flowerheads exhales a sweet honeyed and fruity flavour. It is also cultivated very well in Europe.
