Green rooibos & buckwheat

This creation is a mixture of Africa and Asia, South Africa and Japan, hence its name:

  • Soba in reference to the traditional Japanese soba cha (literal translation: buckwheat tea, or more precisely buckwheat infusion)
  • Khoï in reference to the Khoïsan people who have been consuming and harvesting rooibos in the Cederberg mountains of South Africa for several hundred years.

I wanted to find this green and toasted plant duality present in Genmaicha, Japanese green tea and toasted rice, but without theine, which is why I associated a green rooibos, with fresh plant notes, with buckwheat seeds bringing a toasted facet, dried fruits.
