Buckwheat & barley, France

I discovered drinking cereals while traveling in Japan and South Korea. Infused seeds are very common there. This custom is also found in our latitudes, notably the famous caffè d'orzo in Italy, made with roasted barley seeds that are infused. This taste for infused seeds led me to the paths of a couple of Breton producers specialized in barley and buckwheat roasting: Graine de Breton. I combined their products in a 100% French recipe mixing barley and buckwheat. The buckwheat brings sweetness and smoothness, while the barley completes with body and a toasted facet more assertive, all with a slight salty sensation very pleasant making a nourishing drink but without the calories!

This creation can be found on the tea menu at the Halle aux Grains de la Maison Bras and at Verlet.
